Baked Salmon with Shrimp

THE RECIPE

INGREDIENTS

  • 2 Fresh Salmon fillets (150 gr each)
  • 100 grams of cooked peeled shrimp
  • 3 ounces of cream cheese (softened)
  • 2 tbsp of grated parmesan cheese
  • 3 tbsp of diced black olives
  • 2 tbsp of sour cream
  • 1/4 cup of diced bell pepper
  • 10 spears of asparagus
  • 2 tbsp butter
  • 1 tsp lemon juice

DIRECTIONS

Yield: 2 servings

  • Preheat the oven to 350°F.
  • In a bowl, mix together the shrimp, olives, diced bell pepper, parmesan cheese, sour cream and cream cheese.
  • Place the salmon on parchment paper skin side down.
  • Cover each fillet with the shrimp mixture.
  • Bake for 20-22 minutes.
  • when the salmon is almost done melt the butter in a skillet over medium heat and sautee the asparagus for 1-2 minutes. Add salt and pepper to taste. Finish with the lemon juice.
  • Plate the salmon and arrange the asparagus on/over the salmon. Drizzle the butter/lemon from the skillet over the top.
