
THE RECIPE
INGREDIENTS
- 2 Fresh Salmon fillets (150 gr each)
- 100 grams of cooked peeled shrimp
- 3 ounces of cream cheese (softened)
- 2 tbsp of grated parmesan cheese
- 3 tbsp of diced black olives
- 2 tbsp of sour cream
- 1/4 cup of diced bell pepper
- 10 spears of asparagus
- 2 tbsp butter
- 1 tsp lemon juice
DIRECTIONS
Yield: 2 servings
- Preheat the oven to 350°F.
- In a bowl, mix together the shrimp, olives, diced bell pepper, parmesan cheese, sour cream and cream cheese.
- Place the salmon on parchment paper skin side down.
- Cover each fillet with the shrimp mixture.
- Bake for 20-22 minutes.
- when the salmon is almost done melt the butter in a skillet over medium heat and sautee the asparagus for 1-2 minutes. Add salt and pepper to taste. Finish with the lemon juice.
- Plate the salmon and arrange the asparagus on/over the salmon. Drizzle the butter/lemon from the skillet over the top.
