Halibut wrapped in Prosciutto

THE RECIPE

INGREDIENTS

  • 10 ounces of fresh Halibut
  • 100 grams of Prosciutto
  • 2 tbsp butter
  • 1 Shallot thinly sliced
  • 12 Cherry Tomatoes
  • 1/2 cup of bell pepper sliced
  • 1/2 cup of yellow zucchini sliced

DIRECTIONS

Yield: 2 servings

  • Place the Proscuitto on a cutting board overlapping the slices byt 1/2 inch
  • Place the Halibut on the Proscuitto near the upper edge and roll towards you wrapping the ends under.
  • Put 1 tbsp of butter in a pan over medium heat and sear both side of the wrapped Halibut for 1 minute each
  • Place the pan under your ovens broiler for 6 minutes
  • Sautee the veggies in the remaining 1 tbsp of butter. Add the tomatoes last to ensure they remain firm.

It helps when you also have neighbours who gift you portions of their catches from time to time. When offered fresh Halibut you would have to think long and hard to come up with any reason to decline.
