Summer Cocktail – the Mojito

Light and Refreshing. Summer the Hemingway!

THE RECIPE

INGREDIENTS

  • 1 oz Rum
  • 4 mint leaves
  • 1 tsp monk fruit sweetener
  • 4 oz club soda
  • slice of lime
  • ice cubes

DIRECTIONS

Yield: 1 cocktail

  • Place mint leaves and ice in glass. Crush the mint leaves with the end of a wooden spoon and the ice.
  • Add in the sweetener.
  • Pour in the Rum and club soda.
  • Garnish with lime.
  • Stir and enjoy!

Hot weather is here, time for a refreshing cocktail

Hot summer days call for cool refreshing beverages. The Mojito is a classic low-carb cocktail that I tried while on vacation in Cuba. Had to have the Cuba experience the Hemingway. A bit on the sweet side it is a great go-to beverage in the heat.
